Day 20: Country Fried

Today I was feeling crummy after my last episode with a Starbucks coffee.  It was so bad I carried a barf bag with me on my way to work.  No joke.  The longer I avoid things and accidentally ingest them the worse my reactions are getting.  This is helping me not only to identify problem foods I was unaware of but it's also helping me want to avoid these foods.  I'm not saying I'm happy about not having my most favorite drink in the world, but now I know.

After yesterday's episode I wanted a little comfort food in my life.  I picked up some yellow squash and some pork at the store.  This meal is one of my most favorite childhood meals!  I remember begging my mom to make pork or deer tenderloins with fried squash. I LOVE THIS STUFF!  This time I had to grind up my own buckwheat flour to replace the flour and switch coconut oil for the Crisco my mom would use.  The squash tasted a little sweet with the buckwheat flour, but it was still amazing and the pork, double yum!  I ate my dinner so fast that when I was finished I realized I didn't have a picture to post.  It was so yummy and it made me miss my mom.

I hope that all of you remember mothers day is this weekend!!  I have already got my moms package ready to mail first thing in the morning.
